Low Carb French Toast
Low Carb French Toast

Ingredients:
4 slices of low carb bread (Atkins country wheat works great)
3/4c egg whites or egg beaters
½ 1/4c. soy or nonfat milk
1 tbsp splenda
1 tsp. cinnamon
1 tsp. vanilla extract
Pam Spray - butter flavored
optional: 3/4c blueberries & raspberries

 

Heat skillet to 375 degrees.
In medium size mixing bowl, combine all ingredients except bread and berries.
When mixed thoroughly, dunk low carb bread into mixture. (One slice at a time, make sure to dunk both sides.) Bread should be thoroughly moistened.
Spray skillet with Pam cooking spray. Place bread on skillet.
Cook till bread browns. Then flip to brown other side.

 

Cut bread diagonally and sprinkle with Splenda (looks like powdered sugar) . Add fresh berries if desired.

 

Serve with sugar free syrup.

Oatmeal Walnut Pancakes
Oatmeal Walnut Pancakes

1 C. Nitro-Tech protein (vanilla)
1 c. non-fat or 1% milk
¾ 3/4c. pre-cooked oatmeal or instant oatmeal
3 TBSP egg whites (or 1 whole egg)
2 TBSP butter
1 TBSP Splenda
1 TBSP Lecithin granules
1 Tsp baking powder
½ 1/2Tsp baking soda
1/2Tsp salt
10 Walnut halves

 

Mix all ingredients together.
Set griddle temp between 325-350?
Makes 12 pancakes
Use Atkins sugar free syrup.


Pumpkin Pancakes
Pumpkin Pancakes

1 c. Nitro-tech protein powder
3/4c. pumpkin
1/2c. non-fat milk
3 TBSP egg whites (or one whole egg)
2 TBSP butter (or canola oil)
1 TBSP splenda (sugar substitute)
1 TBSP lecithin granules (can be omitted)
1 Tsp baking powder
1 Tsp vanilla extract
1 Tsp cinnamon
1/2Tsp baking soda
1/2Tsp salt

 

Pre-heat griddle. Set temperature between 325-350 degrees
Mix all ingredients in a food processor or blender.
Spray griddle with Pam (cooking spray)
Makes about 15 3" pancakes.


Apricot Pancakes
Apricot Pancakes

Ingredients:
25 apricots
1 c. Splenda
1 tbsp cinnamon
Pancake mix of your choice (low carb, whole grain, etc.)

 

Clean apricots and remove pits. Place in medium sauce pan on low heat. Add splenda and cinnamon and stir till mixture begins to boil.
Make pancakes according to directions on box.
Add 1 -2 Tbsp of Apricot jam on top of pancakes. Add cool whip and sugar free syrup onto pancakes if desired.

 

Lazy method: Buy sugar free apricot jelly. Put 2 tbsp into microwave safe container and warm.


Veggie Scramble

One Serving

 

Ingredients:
3 large EGG WHITE, CHICKEN, fresh
1 large EGG, CHICKEN, whole, fresh
2 tbsp_ MILK, COW'S, NONFAT, fluid
1/4 cup GREEN BELL PEPPER, SWEET, RAW chopped
1/4 cup_ONION, RAW chopped
1/4 cup MUSHROOM, RAW pieces or slices
1 tsp OLIVE OIL

 

Beat together whole egg, egg whites, and milk. Mix in chopped vegetables. Heat oil in a non-stick skillet over med-high heat. Add egg mixture and cook until eggs are done, stirring constantly as they cook.

 

This scramble contains:
205 calories
protein: 19g
carbs:10g
fat: 10g
sat. fat: 2 g

 

19% carbs, 38% protein, 43% fat

 

*To lower the fat content, use Pam cooking spray instead of oil.
